Regarded by many as the premier cantine of Sicily, Palari own 6 hectares of vines  growing Nerello Mascalese, Nerello Cappucio, Nocere & Nero D'avola. 

Until 1990 they had always sold the wine locally in demijohn but in 1990 they were approached by the wine journalist Luigi Veronelli to start producing the wine commercially & save the Faro D.O.C. from extinction.

After 4 years of experimenting they realised the first vintage in 1994 to immediate acclaim.  The cantine remains small with only 8 hectares of land dedicated to producing the various grapes for their two wines.

In December 2007 their Faro was awarded the prize of Italy's best wine by the Gambero Rosso Food and Wine association of Italy, the top award in the country.
