This has become our favourite quick and easy meal, once you have the garlic, chilli and tomatoes chopped, the meal is ready as quick as you can cook the pasta.  It tastes beautiful with a nice glass of wine and some crusty bread to mop up the juices.

 

Ingredients: 

300 grams of Linguine or Spaghetti

1 can of crab meat

10 cherry tomatoes chopped in half

2 cloves of Garlic

1 Red chilli (deseeded)

A splash of white wine

Handful of chopped parsley

A generous amount of olive oil

 

Heat the olive oil in a large frying pan while the pasta is cooking as per the instructions on the packet.

Finely chop both the garlic and chilli and add to the pan and gently fry for 1-2 minutes.

Add half a glass of white wine and the cherry tomatoes and cook for a further 5 minutes.

Add the crab and half the chopped parsley and heat through, gently stirring all the time.

When the pasta is finished drain it in a colander and add to the frying pan and the sauce.  Mix through the sauce and add the remaining parsley before serving.

NB  As you cook the tomatoes you can mush them with a spoon, but don't mash them all, leave a few halves in the sauce.
